“Momma, I’m hungry. I would like banana bread.”
Knowing my four year old wouldn’t enjoy waiting nearly two hours for a slice of homemade banana bread, and seeing my overripe bananas that could old be fit for a bread or the trash, I turned to the muffin recipe!
It was actually pretty simple.
It comes from the cookbook Tastes and Flavors of Hawaii and I highly recommend it.
All you need is
1/2 c shortening or butter
1 c sugar
1 1/4 c flour
1 tsp baking soda
1/2 tsp salt
1 c mashed bananas
Butter/shortening and sugar, add dry ingredients and bananas alternating as mixing in, spoon into 12 muffin cups and bake at 350 for 15-20 minutes.
That’s it. Just like banana bread but quicker.
